The Eats ~ 8/3 – 8/9
It’s Sunday meal plan time again!
Sundays are the culmination of my organization for the week, and it feels SO good to have my meals and workouts planned so the rest of life can just happen as it happens.
We have about 4 more weeks here in the village until we begin our long journey out to the coast and then north all the way to Wisconsin to begin 8 months of “home assignment.”
That means I’m evaluating, pantry, freezer, and fridge and doing my best to finish up what we have with tasty meals before we hit the road.
So what’s on the menu this week?
Grilled chicken, sweet potato rounds, caprese salad (sans fresh mozz…)
Zucchini & Red Quinoa Burgers
Soba Noodles w/fresh chives & cucumber
Breakfast – Almond Coconut Blueberry Pancakes for Dinner
